Description

Ingredients

  • 1 lb lean ground beef (85-90%)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 can (14 oz) diced tomatoes, undrained
  • 4 cups beef broth
  • 1 tsp Italian seasoning
  • 8 oz lasagna noodles, broken into bite-sized pieces
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1 cup freshly grated Parmesan cheese
  • Salt to taste
  • Pepper to taste
  • Red pepper flakes (optional)
  • Fresh parsley, for garnish
  • Extra Parmesan cheese, for garnish
  • Ricotta cheese (optional, for garnish)

Instructions

  1. In a large Dutch oven or a heavy-bottomed pot, brown the ground beef over medium-high heat, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Add the chopped onion to the pot and cook for about 5-7 minutes until softened and translucent. Stir in the minced garlic and cook for another minute until fragrant.
  3. Stir in the tomato paste and cook for 1-2 minutes, then add the canned diced tomatoes, beef broth, and Italian seasoning. Bring to a gentle simmer for about 10-15 minutes.
  4. Break the lasagna noodles into 1-2 inch pieces and add them to the simmering soup. Cook according to package directions for al dente, about 8-10 minutes, stirring occasionally.
  5. Reduce the heat to low and stir in the heavy cream and cream cheese until fully melted and incorporated. Add half of the freshly grated Parmesan cheese and season with salt, pepper, and red pepper flakes to taste.
  6. Ladle the soup into bowls and garnish with fresh parsley, extra Parmesan cheese, and a dollop of ricotta cheese if desired. Serve immediately.
