- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups cooked rice (white or brown)
- 1 cup broccoli florets
- 1 cup shredded carrots
- ¼ cup green onions, sliced
- ½ cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (more if you like it spicy)
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions
- Cook the rice according to package instructions. Set aside once done.
- In a bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and soy sauce. Mix until smooth. Taste and adjust spice level if necessary.
- Heat vegetable oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden and cooked through, about 5-7 minutes.
- Once the chicken is nearly done, add broccoli florets and shredded carrots to the skillet. Stir and cook for another 3-4 minutes until the vegetables are tender-crisp.
- Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything evenly.
- Place a generous scoop of rice in a bowl, top it with the bang bang chicken mixture, and sprinkle with sliced green onions and sesame seeds for garnish.
