Description

This hearty Pizza Soup is packed with flavor and perfect for a cozy meal.


Ingredients

  • 1 lb Lean Ground Beef or Beef Sausage
  • 1 Yellow Onion, chopped
  • 3 cloves Garlic, minced
  • 1 Bell Pepper (red or green), chopped
  • 1 can Crushed Tomatoes
  • 12 tablespoons Tomato Paste
  • 1 splash Pizza Sauce (optional)
  • 4 cups Low-Sodium Chicken Broth
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 pinch Thyme
  • Salt, to taste
  • Freshly Ground Black Pepper, to taste
  • 1 pinch Red Pepper Flakes (optional)
  • 1 cup Sliced Mushrooms
  • 1/2 cup Sliced Black Olives (or Kalamata)
  • 1 cup Sliced Pepperoni (optional)
  • 1 cup Shredded Mozzarella Cheese
  • 1/4 cup Grated Parmesan Cheese

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat. Add the lean ground beef or beef sausage, breaking it up with a spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain excess grease and set the meat aside.
  2. In the same pot, add a tiny bit of olive oil if needed. Toss in the chopped onion and bell pepper. Cook until softened, about 5-8 minutes, stirring occasionally. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the tomato paste and cook for 1-2 minutes, stirring constantly. Pour in the crushed tomatoes and a splash of pizza sauce. Stir to combine.
  4. Add the broth and return the cooked ground beef or sausage to the pot. Stir in the Italian herbs, salt, black pepper, and red pepper flakes. Bring to a gentle boil, then reduce heat to low, cover, and let simmer for at least 20-30 minutes.
  5. About 10 minutes before serving, stir in the sliced mushrooms, black olives, and diced pepperoni if using. Let them heat through and soften slightly.
  6. Just before serving, stir in half of the shredded mozzarella cheese until melted.
  7. Ladle the hot Pizza Soup into bowls. Top each serving with extra shredded mozzarella, grated Parmesan, and fresh basil leaves or mini pepperoni if desired. Serve immediately with crusty bread or garlic knots.
