- 2 lbs (900 g) boneless skinless chicken thighs
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp paprika

- ½ tsp ground black pepper
- 1 tsp salt
- ½ cup (120 g) plain yogurt
- 3 cloves garlic, finely minced
- 1 tbsp lemon juice
- 2 tbsp olive oil
- ¼ tsp salt
- 4–6 pita breads or flatbreads
- 1 cup shredded lettuce
- 1 cup sliced tomatoes
- ½ cup sliced cucumbers
- ¼ cup chopped parsley
Instructions
- Prepare the Marinade – In a large bowl, combine olive oil, minced garlic, lemon juice, cumin, paprika, coriander, turmeric, salt, and black pepper. Stir until the spices form a fragrant marinade.
- Marinate the Chicken – Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least 1 hour, or up to overnight for deeper flavor.
- Cook the Chicken – Heat a large skillet or grill pan over medium-high heat. Cook the chicken for about 5–6 minutes per side until golden brown and fully cooked. Once done, let the chicken rest for a few minutes before slicing it into thin strips.
- Prepare the Garlic Sauce – In a small bowl, mix yogurt, minced garlic, lemon juice, olive oil, and salt. Stir until smooth and creamy. This sauce is what gives chicken shawarma with garlic sauce its signature tangy and garlicky finish.
- Warm the Bread – Lightly warm the pita or flatbread in a skillet or oven. Warm bread makes the wraps softer and easier to fold.
- Assemble the Shawarma – Place sliced chicken in the center of the bread. Add lettuce, tomatoes, cucumbers, and parsley. Drizzle generously with garlic sauce. Fold the bread around the filling and serve immediately.
