Shrimp in Tomato Sauce

Description

A flavorful shrimp dish cooked in a tomato sauce with spices, perfect for a quick dinner.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 large red onion, chopped
  • 3 cloves garlic, minced
  • 2 chilies, chopped
  • 15 oz can of chopped tomatoes
  • 1 tsp sugar
  • 1/2 cup water
  • 1 tsp ground cumin
  • 1/2 tsp fennel or caraway seeds
  • 1/2 tsp salt
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp toasted sesame seeds
  • 1 large handful fresh parsley, chopped

Instructions

  1. Warm 1 tablespoon olive oil in a large skillet over a medium heat. Add the onion and saute for about 10 minutes to soften.
  2. Add the garlic and chili and cook another 2 minutes.
  3. Stir in the chopped tomatoes, sugar, water, cumin, fennel/caraway seeds and salt. Cover and let simmer for 15 minutes.
  4. Add the peeled shrimp to the tomato mixture making sure to fully submerge the shrimp. Cook until the shrimp are pink and cooked through, about 2-3 minutes. Turn the shrimp if needed.
  5. Sprinkle the sesame seeds and chopped parsley over the top. Taste and season with more salt if needed.
  6. Serve over pasta, with a side of bread or over zucchini noodles, cauliflower rice or mashed cauliflower for low carb options.
