Description
A flavorful shrimp dish cooked in a tomato sauce with spices, perfect for a quick dinner.
Ingredients

- 1 tbsp olive oil
- 1 large red onion, chopped
- 3 cloves garlic, minced
- 2 chilies, chopped
- 15 oz can of chopped tomatoes
- 1 tsp sugar
- 1/2 cup water
- 1 tsp ground cumin
- 1/2 tsp fennel or caraway seeds
- 1/2 tsp salt
- 1 lb shrimp, peeled and deveined
- 1 tbsp toasted sesame seeds
- 1 large handful fresh parsley, chopped
Instructions
- Warm 1 tablespoon olive oil in a large skillet over a medium heat. Add the onion and saute for about 10 minutes to soften.
- Add the garlic and chili and cook another 2 minutes.
- Stir in the chopped tomatoes, sugar, water, cumin, fennel/caraway seeds and salt. Cover and let simmer for 15 minutes.
- Add the peeled shrimp to the tomato mixture making sure to fully submerge the shrimp. Cook until the shrimp are pink and cooked through, about 2-3 minutes. Turn the shrimp if needed.
- Sprinkle the sesame seeds and chopped parsley over the top. Taste and season with more salt if needed.
- Serve over pasta, with a side of bread or over zucchini noodles, cauliflower rice or mashed cauliflower for low carb options.
Notes
- This dish can be served with various sides depending on your dietary preferences.
- Adjust the spice level by adding more or fewer chilies.
