Description

Ingredients

  • 1 pound andouille sausage, sliced
  • 1 pound chicken breast, diced
  • 1 pound shrimp, peeled and deveined
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 3 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Gather and chop all ingredients as listed in the ingredient list.
  2. In a large pot or Dutch oven, heat oil over medium heat.
  3. Add andouille sausage to the pot and cook until browned, about 5 minutes.
  4. Stir in the diced chicken breast and cook until no longer pink, around 5-7 minutes.
  5. Add the onion, bell pepper, celery, and garlic. Sauté for about 3-4 minutes until the vegetables soften.
  6. Add Cajun seasoning, thyme, salt, and pepper. Cook for another minute to release the flavors.
  7. Stir in the rice, diced tomatoes (with juice), and chicken broth.
  8. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes or until the rice is tender and liquid is absorbed.
  9. Once the rice is cooked, stir in the shrimp. Cover and let sit for an additional 5-7 minutes, until shrimp are opaque and cooked through.
  10. Check the dish, adjust for salt and pepper if necessary. Remove the bay leaves before serving.
  11. Sprinkle with sliced green onions and fresh parsley.
