Delicious stuffed bell peppers filled with a savory ground beef and rice mixture, topped with cheese.

- 4 large bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes (fresh or canned)
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef, onions, and garlic over medium heat until the beef is browned and the onions are soft.
- Add the cooked rice, diced tomatoes, and seasonings to the beef mixture. Stir until well combined.
- Stuff each bell pepper with the beef and rice mixture and place them upright in a baking dish.
- Top with shredded cheese.
- Cover with aluminum foil and bake for about 30 minutes.
- Remove the foil and bake for an additional 10 minutes until the peppers are tender and cheese is bubbly.
- Serve warm.
Notes
- This dish can be made ahead of time and stored in the refrigerator before baking.
- Feel free to add other vegetables to the filling if desired.
