Description

Delicious stuffed bell peppers filled with a savory ground beef and rice mixture, topped with cheese.


Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (fresh or canned)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground beef, onions, and garlic over medium heat until the beef is browned and the onions are soft.
  4. Add the cooked rice, diced tomatoes, and seasonings to the beef mixture. Stir until well combined.
  5. Stuff each bell pepper with the beef and rice mixture and place them upright in a baking dish.
  6. Top with shredded cheese.
  7. Cover with aluminum foil and bake for about 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes until the peppers are tender and cheese is bubbly.
  9. Serve warm.

Notes

  • This dish can be made ahead of time and stored in the refrigerator before baking.
  • Feel free to add other vegetables to the filling if desired.
