Ingredients

  • 1/2 cup corn starch
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 pounds chicken wings
  • 4 tablespoons unsalted butter
  • 1 medium shallot
  • 4 cloves garlic
  • 1/3 cup fish sauce
  • 2 tablespoons granulated sugar
  • 1/4 cup water
  • Oil for frying
  • 1 lime wedges
  • As desired optional garnishes

Instructions

  1. In a large bowl, combine all-purpose flour, corn starch, salt, and pepper. Toss the chicken wings in this mixture, ensuring they’re well-coated. Let them sit for 30 minutes to absorb those delicious flavors.
  2. While the wings are resting, melt the unsalted butter in a skillet over medium heat. Add minced shallot and garlic, sautéing until fragrant and golden brown, about 3-4 minutes.
  3. Pour in the fish sauce, add granulated sugar, and water to the skillet. Simmer this mixture until reduced by half, stirring occasionally, which should take about 5-6 minutes.
  4. In a heavy-bottomed pot, heat oil to 350°F. Set up a cooling rack on a paper towel-lined baking sheet for draining.
  5. Carefully fry the chicken wings in batches for 6-8 minutes until golden brown and the internal temperature reaches 180°F.
  6. In a large mixing bowl, combine the hot wings with the prepared sauce, tossing gently until they are evenly coated. Serve with lime juice and garnishes.
