Delicious and fluffy banana pancakes perfect for breakfast.
Ingredients

- 1 cup milk
- 1/2 cup ripe banana (mashed well)
- 1 large egg
- 1 tablespoon sugar
- 1/2 tablespoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 cup baking mix
Instructions
- Mash the banana.
- In a mixing bowl combine the baking mix and cinnamon.
- In another large bowl combine the milk, mashed bananas, egg, and vanilla.
- Slowly pour the baking mix and cinnamon into the milk mixture whisking to combine as you go. Don’t over mix.
- Heat a medium skillet over medium-low heat.
- Add a pat of butter or oil to the hot skillet.
- Pour 1/4 cup of the pancake batter into the skillet.
- When the pancake is starting to bubble and the edges look golden, flip the pancake. A tip to know when the pancake is ready to flip is to watch for bubbles that are popping. Also, those edges should be golden. This should take about 5 minutes before you need to flip.
- Cook pancake for another 3 minutes until both sides are golden brown.
Notes
- Serve with maple syrup or fresh fruit.
- For extra flavor, add chocolate chips or nuts to the batter.
