Description

Delicious and fluffy banana pancakes perfect for breakfast.


Ingredients

Scale
  • 1 cup milk
  • 1/2 cup ripe banana (mashed well)
  • 1 large egg
  • 1 tablespoon sugar
  • 1/2 tablespoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 cup baking mix

Instructions

  1. Mash the banana.
  2. In a mixing bowl combine the baking mix and cinnamon.
  3. In another large bowl combine the milk, mashed bananas, egg, and vanilla.
  4. Slowly pour the baking mix and cinnamon into the milk mixture whisking to combine as you go. Don’t over mix.
  5. Heat a medium skillet over medium-low heat.
  6. Add a pat of butter or oil to the hot skillet.
  7. Pour 1/4 cup of the pancake batter into the skillet.
  8. When the pancake is starting to bubble and the edges look golden, flip the pancake. A tip to know when the pancake is ready to flip is to watch for bubbles that are popping. Also, those edges should be golden. This should take about 5 minutes before you need to flip.
  9. Cook pancake for another 3 minutes until both sides are golden brown.

Notes

  • Serve with maple syrup or fresh fruit.
  • For extra flavor, add chocolate chips or nuts to the batter.
