Scale
- 4 cups All-Purpose Flour
- 1/4 cup Granulated Sugar
- 1 tsp Salt
- 2 1/4 tsp Instant Yeast
- 1 1/4 cups Cold Whole Milk
- 1 cup Unsalted Butter
- 16 Chocolate Batons
- 1 tbsp Milk

Instructions
- In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk and mix until combined.
- Knead on a floured surface until smooth. Cover and chill while dough rises.
- After rising, roll out the dough into a large rectangle and encase the chilled butter by folding the dough over it.
- Roll out again and perform three folds, chilling if necessary between each fold.
- Cut triangles from the final rolled-out dough, place a chocolate baton at the base of each triangle, and roll tightly.
- Arrange on a baking sheet lined with parchment paper, brush with milk, and let rise for another 30 minutes.
- Preheat oven to 400°F (200°C) and bake for about 20 minutes or until golden brown.
Notes
- Make sure the butter is chilled for better lamination.
- Allow the croissants to cool slightly before dusting with confectioners’ sugar.
