Key Ingredients for Gluten Free Vegan Vanilla Cake

Creating a delightful gluten free vegan vanilla cake means celebrating flavors that are rich yet simple. Let’s explore the star ingredients that come together harmoniously to create this delicious dessert.

Gluten-Free Flour: This is the backbone of our cake, allowing us to maintain a light and fluffy texture. I prefer using a blend like almond flour and coconut flour for a subtle nuttiness and moisture, but a pre-mixed gluten-free all-purpose flour works beautifully too!

Natural Sweeteners: I opt for coconut sugar, which adds a caramel-like depth without being overwhelmingly sweet, balancing well with the vanilla. It’s also a more wholesome choice compared to refined sugars.

Unsweetened Applesauce: This ingredient serves as a fantastic egg replacement, contributing moisture and tenderness. Plus, it’s a great way to sneak in a bit of fruit!

Baking Soda & Baking Powder: These leavening agents elevate your cake, ensuring it rises beautifully. They work together to give the cake a light and airy texture.

Vanilla Extract: A must-have flavor booster! Using pure vanilla extract makes a noticeable difference, infusing rich and aromatic notes into every bite.

In short, these ingredients are essential in crafting a light and flavorful gluten free vegan vanilla cake that everyone can enjoy!

Tips for Making Perfect Gluten Free Vegan Vanilla Cake

Creating a gluten free vegan vanilla cake can feel like navigating uncharted territory at first, but the journey is well worth it for that delightful, fluffy cake that everyone will love. Here are some key tips to ensure your baking experience is both enjoyable and successful.

Quality Ingredients Matter

  • Gluten-Free Flour Blend: Choosing a high-quality gluten-free flour blend is crucial. Look for one that contains a mix of flours and starches for the best texture. Almond flour adds moisture, while tapioca flour enhances the cake’s fluffiness.

  • Plant-Based Milk: Use unsweetened plant-based milk, such as almond or coconut milk, for a subtle creaminess without overpowering the vanilla flavor.

  • Sweeteners: Maple syrup or agave nectar are fantastic substitutes for granulated sugar. They not only add sweetness but also retain moisture in the cake.

Mix It Right

  • Don’t Overmix: When combining your dry and wet ingredients, mix until just combined. Overmixing can lead to a dense cake texture. Think of it as an art—gentle strokes are key!

  • Resting Time: Allow the batter to rest for about 10-15 minutes before baking. This helps the gluten-free flour hydrate fully, ensuring your gluten free vegan vanilla cake rises beautifully.

Baking Technique

  • Oven Temperature: Make sure your oven is preheated to the right temperature. Baking at too high of a temperature can cause the cake to rise rapidly and collapse.

By following these tips, you’ll be well on your way to baking the perfect gluten free vegan vanilla cake that’s not only delicious but also beautifully light and fluffy!

FAQs about Gluten Free Vegan Vanilla Cake

Baking a gluten free vegan vanilla cake is not only a delightful experience, but it also paves the way for countless memorable moments. However, questions can arise during the journey. Let’s tackle some common inquiries to enhance your baking adventure!

Can I substitute aquafaba with something else?

Absolutely! If you find yourself without aquafaba, you have options. Popular substitutes include unsweetened applesauce or mashed bananas. Each alternative brings its own subtle flavor and moisture, so choose one that complements your cake. For best results, use about 1/4 cup of either substitute for every 3 tablespoons of aquafaba you’d typically use.

How do I know when my cake is done baking?

It can be tricky to gauge baking perfection, especially with a gluten free vegan vanilla cake. A good rule of thumb is to rely on the toothpick test. Insert a toothpick into the center of the cake; if it comes out clean or with a few moist crumbs, your cake is likely done. Additionally, the edges should gently pull away from the sides of the pan. Trust your instincts—baking is both an art and a science!

Any tips for frosting a vegan cake?

Frosting a vegan cake can be an interesting endeavor, especially when considering texture and flavor. Here are some handy tips:

  • Choose the right frosting: A creamy vegan buttercream or a rich chocolate ganache can elevate your cake’s taste.
  • Cool completely: Ensure your cake is fully cooled before frosting to prevent melting and slipping.
  • Layer it up: If you’re working with a layered cake, spread a thin crumb coat first to trap any loose crumbs. Once set, add your final layer of frosting for a smooth finish.

By following these tips, you’ll create a stunning gluten free vegan vanilla cake that not only tastes amazing but looks fabulous too!

Description

This delicious vegan gluten-free cake is light and fluffy, perfect for any occasion!

Ingredients

Scale
  • 6 tablespoons (90 ml) aquafaba (the liquid found in chickpea cans – use unsalted chickpeas)
  • 1/2 teaspoon cream of tartar
  • 1 1/2 cup (300 g) white granulated sugar, divided
  • 2 1/4 cups (315 g) gluten free all purpose flour
  • 2 tablespoons cornstarch
  • 3/4 teaspoon xanthan gum
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, softened
  • 2/3 cup (190 g) plain dairy free yogurt
  • 1/2 cup (120 ml) dairy free milk
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven the 325°F/170°C. Grease and line the bottoms of two 8 inch round cakes. Set aside.
  2. Aquafaba prep: In a large bowl or stand mixer bowl combine the aquafaba, cream of tartar and 1/4 cup (50 g) sugar. Use a handheld electric mixer or stand mixer fitted with a whisk attachment to beat on high until this aquafaba transformed into a white, voluminous, whipped up mixture. This can take anywhere from 3-10 minutes depending on the speed and strength of your mixer. Sometimes take a bit longer depending on the quality of the aquafaba. Set aside for now.
  3. Wet Ingredient Prep: In a medium or small bowl mix together the yogurt, milk and vanilla extract until combined. Set aside.
  4. Dry Ingredient Prep: In one more large mixing bowl whisk together the gluten free flour, starch, xanthan gum, baking soda, baking powder, salt and remaining sugar (1 1/4 cup | 250 g).
  5. Add the softened butter to the flour mixture. Beat the butter into the dry ingredients using a hand mixer or a stand mixer on a medium speed until fully combined. You should end up with a soft, sandy looking flour mixture.
  6. Pour the milk mixture into the flour mixture and mix on a low speed to combine. You should have a very thick batter at this point.
  7. In three stages, add the whipped aquafaba to the rest of the batter – mix together after each addition. Use a wooden spoon or rubber spatula to add the aquafaba. Mix the first addition of aquafaba vigorously, then be gentle when folding in the second and third addition. Make sure to scrape the sides and bottom of the bowl to fully mix everything together. The cake batter should be thick and smooth.
  8. Evenly divide the cake batter between the two greased cake pans. If you have a kitchen scale, each cake tin will hold about 550 grams each. Smooth out the batter evenly over the top. Gently lift up the tins and drop them on a counter/table surface to get rid of air bubbles.
  9. Place in the middle of the oven and bake for 40-42 minutes. To check for doneness, insert a knife or toothpick into the centre of the cake. If it comes out clean, it’s done.
  10. Let the cakes cool in their pans for about 5 minutes, then flip over onto a cooling rack. Let cool completely before frosting or filling.
  11. Once cooled you can frost and decorate with your preferred frosting as you see fit and enjoy!

Notes

  • Ensure that the aquafaba is whipped properly for the best texture.
  • This cake can be frosted with any vegan frosting of your choice.
