Delicious homemade pierogi filled with a creamy potato and cottage cheese mixture.
Ingredients

- 2 cups all-purpose flour
- 1 large egg
- 1/2 cup room temperature water
- 1/2 tsp salt
- 2 medium starchy potatoes (like Russets)
- 1 cup full-fat cottage cheese
- Sour cream (for serving)
Instructions
- Prepare the Dough: In a bowl, mix flour and salt. Create a well in the center, adding the egg and water gradually until a soft dough forms. Knead gently until smooth.
- Make the Filling: Boil peeled potatoes until fork-tender, then drain and mash. Mix with cottage cheese and season with salt.
- Roll Out Dough: On a floured surface, roll dough to about 1/8 inch thick. Cut out 3-inch circles using a cookie cutter.
- Fill and Seal: Place one tablespoon of filling on each circle, fold over, and pinch edges firmly to seal.
- Cook the Pierogi: Boil salted water in a pot; drop in pierogi batches and cook until they float (3-5 minutes). Remove with a slotted spoon.
- Sauté for Extra Flavor: In a skillet over medium heat, melt butter; sauté cooked pierogi until golden brown on both sides.
Notes
- You can add herbs or spices to the filling for extra flavor.
- Freeze uncooked pierogi on a baking sheet and then transfer to a bag for longer storage.
