Description

A delicious and easy beef casserole loaded with cheese and flavor.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 can Rotel (diced tomatoes & green chiles), drained
  • 1 can whole kernel corn, drained
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 bag tortilla chips, lightly crushed

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook ground beef and onion in a skillet until browned. Drain excess fat.
  3. Stir in taco seasoning, Rotel, and corn. Cook for 2 minutes.
  4. In a large bowl, mix cream of chicken soup, sour cream, and 1 cup shredded cheese.
  5. Add the beef mixture into the creamy mixture and stir well.
  6. Spread crushed tortilla chips over the bottom of the baking dish.
  7. Pour the casserole mixture on top.
  8. Sprinkle with the remaining 1 cup cheese.
  9. Bake for 25–30 minutes, until hot and bubbly.
