A delicious and easy beef casserole loaded with cheese and flavor.
Ingredients

- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1 can Rotel (diced tomatoes & green chiles), drained
- 1 can whole kernel corn, drained
- 1 can cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1 bag tortilla chips, lightly crushed
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook ground beef and onion in a skillet until browned. Drain excess fat.
- Stir in taco seasoning, Rotel, and corn. Cook for 2 minutes.
- In a large bowl, mix cream of chicken soup, sour cream, and 1 cup shredded cheese.
- Add the beef mixture into the creamy mixture and stir well.
- Spread crushed tortilla chips over the bottom of the baking dish.
- Pour the casserole mixture on top.
- Sprinkle with the remaining 1 cup cheese.
- Bake for 25–30 minutes, until hot and bubbly.
Notes
- Serve with a side salad for a complete meal.
- Customize with additional toppings like jalapeños or olives if desired.
