Description

Delicious white chocolate sandwich cookies known as Shiroi Koibito.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 7 oz white chocolate, chopped

Instructions

  1. Start by preheating your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream the softened butter and powdered sugar until creamy. Add the egg and vanilla extract, and mix until combined.
  3. In another bowl, sift together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  5. Scoop small portions of the dough and roll them into balls. Place them on the prepared baking sheet, flattening them slightly.
  6. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet briefly before transferring them to a wire rack to cool completely.
  7. While the cookies are cooling, melt the white chocolate in a microwave or using a double boiler until smooth.
  8. Once the cookies are cool, spread a small amount of melted white chocolate on the flat side of one cookie. Place another cookie on top to create a sandwich. Repeat until all cookies are filled.
  9. Allow the white chocolate to set completely at room temperature or refrigerate for about 15 minutes.
  10. Once set, your Shiroi Koibito is ready to be enjoyed!

  • For best results, ensure all ingredients are at room temperature before starting.
  • You can also add a sprinkle of sea salt on top of the melted chocolate for extra flavor.
