Delicious white chocolate sandwich cookies known as Shiroi Koibito.

- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 7 oz white chocolate, chopped
Instructions
- Start by preheating your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- In a mixing bowl, cream the softened butter and powdered sugar until creamy. Add the egg and vanilla extract, and mix until combined.
- In another bowl, sift together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Scoop small portions of the dough and roll them into balls. Place them on the prepared baking sheet, flattening them slightly.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet briefly before transferring them to a wire rack to cool completely.
- While the cookies are cooling, melt the white chocolate in a microwave or using a double boiler until smooth.
- Once the cookies are cool, spread a small amount of melted white chocolate on the flat side of one cookie. Place another cookie on top to create a sandwich. Repeat until all cookies are filled.
- Allow the white chocolate to set completely at room temperature or refrigerate for about 15 minutes.
- Once set, your Shiroi Koibito is ready to be enjoyed!
Notes
- For best results, ensure all ingredients are at room temperature before starting.
- You can also add a sprinkle of sea salt on top of the melted chocolate for extra flavor.
