Description

A delicious avocado and egg toast recipe that combines various flavors and textures.


Ingredients

  • 1 medium avocado
  • 3 hard-boiled eggs
  • 2 Tbsp plain greek yogurt
  • 1 Tbsp juice of half a large lemon
  • 1 Tbsp dijon mustard
  • ¼ cup fresh parsley, chopped

  • 1 shallot, chopped (optional)

  • salt and black pepper, to taste
  • 1 slice sourdough bread

Instructions

  1. Cut avocado in half and remove the pit. Then scoop out the flesh.
  2. Roughly chop the shallot and hard-boiled eggs.
  3. Add everything to a cutting board.
  4. Smash all the ingredients using either a masher, fork, or a kitchen knife.
  5. Top a piece of toast with the avocado and egg mixture.
  6. Optional: Add crushed red chili flakes or your favorite toppings.
