- 4 slices bread (your choice: sourdough, whole wheat, or white)
- 2 cups fresh spinach, washed and chopped
- 1/2 cup feta cheese, crumbled
- 1/2 cup mozzarella or cheddar cheese, shredded (optional, for extra meltiness)
- 2 tbsp butter, softened
- 1/4 tsp garlic powder (optional, for extra flavor)
- 1 tsp olive oil (optional, for sautéing spinach)
Instructions
- Prep the spinach: Heat a small skillet over medium heat with 1 tsp olive oil (optional). Sauté spinach for 1–2 minutes until wilted. Remove from heat and let it cool slightly.
- Assemble sandwiches: Butter one side of each slice of bread. On the unbuttered sides, layer spinach, feta, and optional mozzarella. Top with the other slice of bread, buttered side out.
- Cook the sandwich: Heat a skillet or griddle over medium heat. Place sandwiches in the skillet and cook 3–4 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted.
- Serve: Slice sandwiches in half and serve warm.
