Description

Ingredients

  • 4 slices bread (your choice: sourdough, whole wheat, or white)
  • 2 cups fresh spinach, washed and chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella or cheddar cheese, shredded (optional, for extra meltiness)
  • 2 tbsp butter, softened
  • 1/4 tsp garlic powder (optional, for extra flavor)
  • 1 tsp olive oil (optional, for sautéing spinach)

Instructions

  1. Prep the spinach: Heat a small skillet over medium heat with 1 tsp olive oil (optional). Sauté spinach for 1–2 minutes until wilted. Remove from heat and let it cool slightly.
  2. Assemble sandwiches: Butter one side of each slice of bread. On the unbuttered sides, layer spinach, feta, and optional mozzarella. Top with the other slice of bread, buttered side out.
  3. Cook the sandwich: Heat a skillet or griddle over medium heat. Place sandwiches in the skillet and cook 3–4 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted.
