A delicious and easy sweet and sour chicken recipe that combines chicken, bell peppers, and pineapple in a flavorful sauce.

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- ½ cup cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, chopped (red or green)
- 1 medium onion, chopped
- 1 cup pineapple chunks (fresh or canned)
- ¼ cup apple cider vinegar
- ¼ cup ketchup
- ¼ cup granulated sugar
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- Rinse and cut the chicken breasts into bite-sized pieces. Pat them dry with paper towels to remove excess moisture.
- Place cornstarch in a bowl. Toss chicken pieces in cornstarch until evenly coated. Set aside.
- In a large non-stick skillet or wok, heat vegetable oil over medium-high heat.
- Add the coated chicken pieces to the hot skillet. Cook until golden brown, about 5-7 minutes, stirring occasionally for even browning. Remove the chicken from the skillet and set aside.
- In the same skillet, add bell peppers and onions. Sauté until they begin to soften, about 3-4 minutes.
- In a small bowl, whisk together apple cider vinegar, ketchup, granulated sugar, soy sauce, garlic powder, and a pinch of salt and pepper. Mix well until smooth.
- Return cooked chicken to the skillet. Add pineapple chunks and sauce mixture. Stir until everything is well coated.
- Reduce the heat to medium-low and cover the skillet. Allow the mixture to simmer for about 10 minutes to heat through and combine flavors.
- Taste and adjust seasonings, adding more salt or pepper if needed.
- Serve the sweet and sour chicken warm over a bed of fluffy rice or alongside steamed vegetables.
Notes
- For a thicker sauce, add more cornstarch mixed with a little water.
- This dish can be served with white rice or brown rice.
- Feel free to add other vegetables like broccoli or snap peas.
