Description

A delicious and easy sweet and sour chicken recipe that combines chicken, bell peppers, and pineapple in a flavorful sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ cup cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, chopped (red or green)
  • 1 medium onion, chopped
  • 1 cup pineapple chunks (fresh or canned)
  • ¼ cup apple cider vinegar
  • ¼ cup ketchup
  • ¼ cup granulated sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Rinse and cut the chicken breasts into bite-sized pieces. Pat them dry with paper towels to remove excess moisture.
  2. Place cornstarch in a bowl. Toss chicken pieces in cornstarch until evenly coated. Set aside.
  3. In a large non-stick skillet or wok, heat vegetable oil over medium-high heat.
  4. Add the coated chicken pieces to the hot skillet. Cook until golden brown, about 5-7 minutes, stirring occasionally for even browning. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add bell peppers and onions. Sauté until they begin to soften, about 3-4 minutes.
  6. In a small bowl, whisk together apple cider vinegar, ketchup, granulated sugar, soy sauce, garlic powder, and a pinch of salt and pepper. Mix well until smooth.
  7. Return cooked chicken to the skillet. Add pineapple chunks and sauce mixture. Stir until everything is well coated.
  8. Reduce the heat to medium-low and cover the skillet. Allow the mixture to simmer for about 10 minutes to heat through and combine flavors.
  9. Taste and adjust seasonings, adding more salt or pepper if needed.
  10. Serve the sweet and sour chicken warm over a bed of fluffy rice or alongside steamed vegetables.

  • For a thicker sauce, add more cornstarch mixed with a little water.
  • This dish can be served with white rice or brown rice.
