- 1 pound ground beef (or turkey)
- 1 medium onion, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes, with juice
- 1 can (1 oz) taco seasoning
- 2 cups beef (or vegetable) broth
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
- Add diced onion to the pot. Sauté for about 5 minutes until the onion becomes translucent.
- Stir in the black beans and corn, mixing well with the meat and onions.
- Pour in the diced tomatoes along with their juice. Stir everything together.
- Sprinkle the taco seasoning over the mixture and stir until evenly distributed.
- Pour in the beef broth. Stir to combine all the ingredients.
- Bring the soup to a gentle boil, then reduce the heat and let it simmer for 20 minutes. Stir occasionally to prevent sticking.
- Taste and add additional salt or seasoning if needed.
- Remove from heat and let it cool for a few minutes before serving.
