Ingredients

  • 1 pound ground beef (or turkey)
  • 1 medium onion, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes, with juice
  • 1 can (1 oz) taco seasoning
  • 2 cups beef (or vegetable) broth

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
  2. Add diced onion to the pot. Sauté for about 5 minutes until the onion becomes translucent.
  3. Stir in the black beans and corn, mixing well with the meat and onions.
  4. Pour in the diced tomatoes along with their juice. Stir everything together.
  5. Sprinkle the taco seasoning over the mixture and stir until evenly distributed.
  6. Pour in the beef broth. Stir to combine all the ingredients.
  7. Bring the soup to a gentle boil, then reduce the heat and let it simmer for 20 minutes. Stir occasionally to prevent sticking.
  8. Taste and add additional salt or seasoning if needed.
  9. Remove from heat and let it cool for a few minutes before serving.
