Description

This delicious zucchini cake is moist, sweet, and topped with a creamy frosting. Perfect for any occasion!


Ingredients

  • 2 1/2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1 1/4 cups vegetable oil
  • 3/4 cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups shredded zucchini (about 2 medium)
  • 1 cup walnuts finely chopped
  • 1/2 cup butter (softened)
  • 8 ounces cream cheese (softened)
  • 3 cups powdered sugar

Instructions

  1. Preheat the oven to 350 degrees and spray a 9×13 baking pan with non stick cooking spray.
  2. In a medium bowl, add the flour, baking soda, baking powder, salt, cinnamon, and nutmeg and whisk until combined.
  3. In a large bowl, add the eggs, vegetable oil, sugars, and vanilla extract and whisk until combined.
  4. Add the dry ingredients into the wet ingredients and using a spoon mix until combined. The batter will be on the dryer side.
  5. Fold in the shredded zucchini and mix until incorporated. The water from the zucchini will add the moisture the batter needs.
  6. Spread the batter into the prepared baking pan and bake for 28-30 minutes or until a toothpick comes out clean.
  7. In a medium bowl, add the room temperature butter and cream cheese and using a hand mixer, beat until smooth. Add in the powdered sugar and beat until combined, making sure to scrape down the sides with a spatula.
  8. Let the cake cool completely, then spread the cream cheese frosting over the top and sprinkle the walnuts on.
  9. Serve! Store leftovers in the refrigerator.

Notes

  • Make sure to let the zucchini drain slightly before adding it to the batter to avoid excess moisture.
  • This cake can be made a day in advance; it tastes even better the next day!
