Description

Delicious muffins made with diced beef ham and sharp cheddar cheese, perfect for breakfast or a snack.

Ingredients

Scale
  • 1 cup diced Beef Ham
  • 1 cup shredded sharp Cheddar cheese
  • 2 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 cup Milk (whole or non-dairy)
  • 2 large Eggs
  • 1/2 cup Melted Butter (unsalted)
  • 1 tablespoon Chives (fresh, chopped)
  • 1 teaspoon Dry Mustard Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • Salt to taste
  • Black Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a 12-cup standard muffin tin with paper liners or grease it well.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, dry mustard powder, onion powder, garlic powder, salt, and black pepper.
  3. In a separate bowl, lightly beat the large eggs, then whisk in the milk and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  5. Gently fold in the diced beef ham, shredded cheese, and fresh chives until evenly distributed.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Notes
