Description
A classic Caesar salad with homemade croutons and dressing.
Ingredients

- 1 large head romaine lettuce (chopped)
- 2 cups cubed bread (for croutons)
- 1/4 cup olive oil (divided)
- 1/2 cup freshly grated Parmesan
- 1 egg yolk or 2 tbsp mayonnaise
- 2 cloves garlic (minced)
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 tbsp lemon juice
- 1/2 tsp anchovy paste (optional)
- Salt and pepper to taste
Instructions
- Make the Croutons: Toss bread cubes with 2 tbsp olive oil, salt, and pepper. Bake at 350°F (175°C) for 10–15 minutes until golden.
- Prepare the Dressing: Whisk egg yolk or mayo, garlic, mustard, Worcestershire, lemon juice, anchovy paste, and Parmesan. Slowly drizzle in remaining olive oil until creamy.
- Assemble the Salad: In a large bowl, toss romaine with dressing, croutons, and more Parmesan. Finish with black pepper and serve immediately.
Notes
- This salad can be made vegetarian by omitting the anchovy paste.
