Description

A classic Caesar salad with homemade croutons and dressing.


Ingredients

Scale
  • 1 large head romaine lettuce (chopped)
  • 2 cups cubed bread (for croutons)
  • 1/4 cup olive oil (divided)
  • 1/2 cup freshly grated Parmesan
  • 1 egg yolk or 2 tbsp mayonnaise
  • 2 cloves garlic (minced)
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 1/2 tsp anchovy paste (optional)
  • Salt and pepper to taste

Instructions

  1. Make the Croutons: Toss bread cubes with 2 tbsp olive oil, salt, and pepper. Bake at 350°F (175°C) for 10–15 minutes until golden.
  2. Prepare the Dressing: Whisk egg yolk or mayo, garlic, mustard, Worcestershire, lemon juice, anchovy paste, and Parmesan. Slowly drizzle in remaining olive oil until creamy.
  3. Assemble the Salad: In a large bowl, toss romaine with dressing, croutons, and more Parmesan. Finish with black pepper and serve immediately.

Notes

  • This salad can be made vegetarian by omitting the anchovy paste.
