Description
A delicious and aromatic chicken shawarma recipe, marinated with spices and served with a tangy garlic sauce.

- 2 lbs (900 g) boneless skinless chicken thighs
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp ground coriander
- ½ tsp turmeric
- ½ tsp ground black pepper
- 1 tsp salt
- ½ cup (120 g) plain yogurt
- 3 cloves garlic, finely minced
- 1 tbsp lemon juice
- 2 tbsp olive oil
- ¼ tsp salt
- 4–6 pita breads or flatbreads
- 1 cup shredded lettuce
- 1 cup sliced tomatoes
- ½ cup sliced cucumbers
- ¼ cup chopped parsley
Instructions
- Prepare the Marinade – In a large bowl, combine olive oil, minced garlic, lemon juice, cumin, paprika, coriander, turmeric, salt, and black pepper. Stir until the spices form a fragrant marinade.
- Marinate the Chicken – Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least 1 hour, or up to overnight for deeper flavor.
- Cook the Chicken – Heat a large skillet or grill pan over medium-high heat. Cook the chicken for about 5–6 minutes per side until golden brown and fully cooked. Once done, let the chicken rest for a few minutes before slicing it into thin strips.
- Prepare the Garlic Sauce – In a small bowl, mix yogurt, minced garlic, lemon juice, olive oil, and salt. Stir until smooth and creamy.
- Warm the Bread – Lightly warm the pita or flatbread in a skillet or oven.
- Assemble the Shawarma – Place sliced chicken in the center of the bread. Add lettuce, tomatoes, cucumbers, and parsley. Drizzle generously with garlic sauce. Fold the bread around the filling and serve immediately.
