Description

This rich and decadent Chocolate Mousse Cake features a light chocolate cake base topped with a luscious dark chocolate mousse.

Ingredients

Scale
  • ¾ cup (95 g) all-purpose flour
  • ¼ cup (25 g) unsweetened cocoa powder
  • ¾ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup (100 g) granulated sugar
  • ¼ cup (60 ml) vegetable oil
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup (120 ml) milk
  • 8 oz (225 g) dark chocolate, chopped
  • 1 ½ cups (360 ml) heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Optional: chocolate shavings
  • Optional: cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch round cake pan with parchment paper and lightly grease the sides.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. This helps distribute the cocoa evenly throughout the batter.
  3. In another bowl, whisk sugar, vegetable oil, egg, vanilla extract, and milk until smooth and well blended.
  4. Add the dry ingredients to the wet mixture and stir until just combined. The batter should be smooth and slightly glossy.
  5. Pour the batter into the prepared pan and bake for 18–22 minutes. The cake should spring back lightly when touched. Let it cool completely in the pan.
  6. Place chopped dark chocolate in a heatproof bowl and melt it gently using a double boiler or short microwave intervals. Stir until smooth and allow it to cool slightly.
  7. In a chilled bowl, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form. The cream should be fluffy but not stiff.
  8. Fold the melted chocolate gently into the whipped cream. Use slow, sweeping motions to keep the mixture light and airy.
  9. Spread the mousse evenly over the cooled cake layer. Smooth the top with a spatula and refrigerate for at least 4 hours, or until fully set.
  10. Before serving, add chocolate shavings or a light dusting of cocoa powder. Each slice of dark chocolate mousse cake reveals a beautiful contrast between the soft cake base and the creamy mousse.

Notes

  • Make sure to let the cake cool completely before adding the mousse for the best texture.
  • For a stronger chocolate flavor, use high-quality dark chocolate.
  • The mousse can be prepared in advance and stored in the refrigerator for up to 2 days.
