Description

Delicious sweet treats made with medjool dates, creamy peanut butter, and melted chocolate.

Ingredients

Scale
  • 28 medjool dates (pitted)
  • 1 cup peanut butter (chunky or creamy)
  • 1 cup semi-sweet chocolate chips (melted)

Instructions

  1. Line a baking pan with parchment paper.
  2. Slice each date the long way without cutting it all the way through and place it face down on the baking sheet.
  3. Spread the peanut butter evenly overtop of the dates. You can heat the peanut butter in the microwave for about 15 seconds to help it smooth easier if you’d like.
  4. Place the chocolate chips in a microwave safe bowl and microwave for 30 seconds on 60% power level. Stir and repeat for another 30 seconds on 60% power level. Stir again. You can heat for a 3rd time for 30 seconds on 60% power level if needed, but the dish is sometimes warm enough to keep melting the chips as you stir. Be very careful not to overheat the chocolate or it will seize and not be pourable.
  5. Pour the melted chocolate evenly over the peanut butter layer. Sprinkle sea salt or chopped peanuts over the chocolate.
  6. Place in the freezer for 30 minutes to chill and set.
  7. Remove from the freezer and slice into small pieces.

Notes

  • Stay vigilant while melting chocolate to prevent it from seizing.
  • You can customize by adding toppings like chopped nuts or sea salt.
