- 1 lb ground beef or ground turkey
- 2 ¼ cups cooked white rice
- 15 oz can diced tomatoes
- 8 oz can tomato sauce
- ¾ cup finely chopped yellow onion
- 2 teaspoons olive oil
- 1 cup shredded cheddar cheese (¼ cup set aside for topping)
- 2 teaspoons Italian seasoning
- 1 ½ teaspoons minced garlic
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Preheat oven to 375°F (190°C) and prepare the bell peppers by slicing the tops off and removing seeds.
- In a large skillet over medium heat, warm olive oil and brown the ground meat for about 5-7 minutes.
- Add onion, garlic, garlic powder, salt, pepper, and Italian seasoning to the skillet; cook for 2-3 minutes.
- Mix in cooked rice, diced tomatoes, and tomato sauce; let simmer for 5-7 minutes.
- Stuff each bell pepper with the mixture, packing tightly, and place upright in a baking dish.
- Top with shredded cheddar cheese and cover with foil. Bake for 25 minutes.
- Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
- Serve hot, garnished with extra cheese if desired.
